Ingredients
1/2 cup sliced green pepper
1/4 cup sliced onion
6  large eggs (Organic Valley)
1 cup Organic Valley Milk
1 package Simply Organic Fajita Mix
1/2 cup Organic Valley Shredded Cheese

Directions

  •  Preheat skillet over medium heat
  • Saute peppers and onions
  • Whisk the eggs, milk and fajita seasoning
  • Pour omelet mixture in the skillet
  • Top the omelet with shredded cheese.

Serve with guacamole on the side.

Shrimp And Avocado Pasta Salad

Try this organic lunch recipe with crisp vegetables, creamy avocado, and sweet shrimp, this cool pasta salad is a meal in itself.

makes: 8 servings

Ingredients
1- 16oz package penne pasta
1 pound of cooked shrimp (16-20 count), peeled and deveined
1/2 cup shredded cheddar
1 avocado, peeled and diced
1 cup Stonyfield Organic Fat-Free Plain Yogurt
Juice of 2 lemons
2 tomatoes, seeded and diced
peel and slice one cucumber into 1/4-inch-thick half-moons
blanch and chill one cup of green beans
1- teaspoon crushed red pepper
Salt and pepper to taste

Directions
Cook pasta according to package instructions. Rinse pasta under cold water and drain. In a large bowl gently toss together pasta, shrimp, cheddar cheese, avocado, yogurt, lemon juice, tomatoes, cucumbers, green beans, crushed red pepper, and salt and pepper to taste. Serve chilled.

Herb Crusted Eye of Round Beef Roast

Ingredients

3 lb eye of round beef roast
1/8 cup canola oil
5 cloves garlic
1- Tbsp parsley
1- tsp oregano
1-tsp thyme
1 -tsp rosemary
1/2 tsp salt
 2 Tbsp mustard powder

Directions

  • Preheat oven to 350 degrees.
  • In a small bowl stir together canola oil, garlic, parsley, oregano, thyme, rosemary, and salt. Rub herb mixture evenly over roast.
  • Place herb roast in the oven (approximately 45 minutes for medium-rare).
