Spicy Burrito Recipe

There is an art to creating new recipes or changing up old recipes. One, in particular, is smelling the ingredients. I like to smell the ingredients to see if they will pair well with the others and if they will add that certain touch needed to add to the taste I’m looking for. This spicy burrito is one of my favorites and really easy to make. I love taking one of my old recipes and putting a different spin on it.

Wine is similar to that. I like to smell the wine first to see what it will pair well with and enhance the whole meal experience. I was surprised to find that white wine went very well with my spicy burrito recipe.

The wine brought out the flavors of the spicy burrito and made the meal so much more enjoyable.

Ingredients:

2 lbs. Ground beef; 1 pkg. Taco seasoning (I used Old El Paso); 1 pkg. Burrito seasoning (I used McCormick); 16 oz. can Refried beans; 2 cups Mexican cheese blend; 2 fresh Jalapenos; 1 fresh Serrano peppers; 1/4 cup Onions; 1/4 cup Cilantro; 1 Tbs. Garlic powder 1/4 cup Picante sauce (I used Pace Picante Sauce); 1 Tbs. water; 12 Homestyle Flour Tortillas (Mission)

Preheat oven to 400 degrees. Grease a 15×10 pan with butter spray.

Brown the ground beef with the onion, jalapeno peppers, serrano peppers, and garlic powder. Drain the ground beef. Stir in cilantro and add the taco seasoning and burrito seasoning with 1-1/2 cups of water. Let simmer until most of the liquid is gone.

In another pot, heat refried beans adding the Picante sauce.

Lay the tortilla flat; add a layer of refried beans (about 1 tablespoon), a layer of ground beef (about 2 tablespoons), and a cheese blend. Roll in the form of a burrito and place in a pan. Spray burritos with butter spray.

Bake for 15 minutes then change to broil placing the pan on the bottom rack. Bake an additional 5 minutes. (This makes the tortillas crunchy; Yum!!)
